Avocado Cantaloupe Salad with Radicchio

Serves 2

This tangy detox-friendly salad provides antioxidants and healthy oils and is good for the digestion.

Ingredients
Avocado, ½ an avocado
Cantaloupe, 100 g
Radicchio (red parts only), 60 g
Lemongrass, chopped very fine, ½ tsp
Lime juice, ½ tsp
Olive oil, 2 tsp
Rice vinegar, ½ tsp
Pepper black, Pinch
Sea Salt, Pinch


Method
To make the dressing, place the lime juice, rice vinegar and most of the chopped lemongrass (reserve just a small amount to add to salad) into a blender. Blend for about 10 seconds, and then slowly add the olive oil until dressing thickens.

Cut the radicchio, cantaloupe and avocado into fine stripes and put them in a mixing bowl. Add the reserved chopped lemongrass.

Add the dressing to the salad and mix well. Season to taste with sea salt and pepper.

To serve, place the salad in the middle of the plate, squeezing out some of the excess dressing. Drizzle the excess dressing around the salad.
